Thank you, William. As it turns out, the Server 2016 box just seems to have needed another reboot, beyond the one it said it needed, to sort things out.  After that, HITACHI OPEN-V showed up as an available device type to add.  Having done that and rebooted yet again, our F600 device with four paths ...

Shushant pointed to the answer without quite saying it. One upgrades the virtual appliances just like any other Linux host.  So the install ISO needs to be connected to the VM as a virtual device, Linux needs to mount it, and the upgrade is done as on any Linux OS.
