Could you please recommend how many DP Pool Vols I should create to get the best performance?
I will create a DP Vol for ESXi.
pool-vol size usally configured from raid group's max size. But internal ldev size is max 2.99 TB.
If media is 1.6TB fmd dc2, pool-vol is 2ea by 1/2 of usable size carved from r10 2d+2d to distribute mpu or vsd.
i rather create 1 R5 with 6+1 and create one pool and leave 1 as a spare, these FMD's will last longer than regular spinning drives so no need to worry about wear out.
you can also get more space in your pool by doing this.

If you are looking at having maximum IOPS (performance) and the write IO is more from the application you can consider RAID1.
If you are looking at more capacity and the IO is more read then you can consider RAID5.
You can create a single LDEV from the RAID groups and allocate to the pool.
However keep in mind that, it is a best practice have a spare disk allocated in order to take care of any failures.
