The manual has a section on changing the VMDK target size and states how to remove a VMDK that is NOT in production.
Is an explicit way to remove a VMDK disk that is already in production, can this be done?
From HCP perspective you can't remove a VMDK disk which is in use. Keep in mind that HCP has created its /RIS/archivexx on that VMDK. You never would remove an active LUN from a HCP500 - same effect... data loss.
You have to migrate the data from that VMDK first.
LUN-level migration works on VMs.
Note that you need to either be on 6.x, or upgraded to 7.2 for this to work. It does not work on 7.0.x or 7.1.x.
