How to safely stop kettle which is run by kitchen or span?

Now I started the kettle by using kitchen or span. The way when I want to stop the processing is to kill the spoon processes. I have a transform which contains a table delete step, I find that killing process directly may cause the table locked, then every time I need to ask DBA to kill the session.

If I start the kettle in spoon GUI and use the stop button on the GUI, then it works fine.

So I want to know how to safely stop the kettle process by command?

Thanks.
