You can check the following locations:
Each user has a private dashboard. So check your users in Ops Center common services. Might be that he he scheduled the dashboard:

Secondly it can also be an alert in Detailed view. If you login as sysadmin you can see all the scheduled alerts here:

If you click it edit, and check it for SMTP alerts. Should be in one of those that the Email is configured.

I checked them. This particular sender (RCPT from hitachi-ops-center.<out-internal-fqdn>[<ops-center-vm-ip>])
is defined in analyzer detail view. Second screenshot from your reply. But I do not see where I can change the recipient domain (to=<HIAA_REST_Admin@example.com>)
. HIAA_REST_Admin user is nowhere to be seen in UI - neither in analyzer or analyzer detail view.

It might also be Detailed view. You can go there by the top right 3xDots(in the above screenshot) .... Check below as well once in Detailed view. Under 'manage' and then 'Manage SMTP':
